Ingredients
1 cup
shredded extra-old Cheddar cheese
250 mL
1 cup
cooked hash brown potatoes
250 mL
Vegetable spray
eggs
Shredded extra-old Cheddar cheese, for garnish
Method
Combine cheese and hash brown potatos. Spray 4 ramekins with vegetable spray and divide mixture between them making a nest. Crack 1 egg in each nest. Pierce egg yolk with toothpick or fork. Microwave on MEDIUM (50%) for 5 minutes. Sprinkle with additional shredded cheese. Let stand for 3 to 4 minutes.
