Method
  • Whisk eggs, water, basil, salt and pepper in medium bowl until blended; set aside.
  • Heat oil in 10-inch (25 cm) ovenproof skillet over medium heat. Add onion, peppers and garlic; sauté for 3 minutes. Add potato; sauté for another 2 minutes.
  • Pour egg mixture over vegetables in skillet. As mixture sets around edge of skillet, with spatula, gently lift cooked portions to allow uncooked egg to flow underneath. Cook until bottom is set and top is almost set. Sprinkle cheese over top. Place under preheated broiler for about 2 minutes to melt cheese or cover skillet with lid and cook for another minute. Cut into wedges to serve.
Notes
To cook a potato in the microwave, dice, then place in a microwave-safe bowl with 1/4 cup (50 mL) water. Cover. Microwave on High (100% power) until almost tender, about 3 minutes, stirring after 1-1/2 minutes. Let stand for a minute. Drain. Instead of green and red peppers, use 1 cup (250 mL) diced of either, or substitute 1 small diced zucchini.
