low fat Honey Dijon dressing

onion, finely chopped
Freshly ground pepper, to taste
Method
- Lightly spray a shallow 2-cup (500 mL) microwave-safe dish with vegetable spray. In the same dish, beat together eggs, dressing, onion and pepper. Cover with plastic wrap, turning one corner back to create a small steam vent.
- Microwave on MEDIUM (50%) for 3-1/2 to 4 minutes, stirring halfway and at the end of cooking. Let stand for 1 minute.
Notes
Variations: For a change of taste, try other dressings: Sundried Tomato & Oregano, French, Thousand Islands, etc.
Tip: Always use microwave-safe cookware in your microwave oven. Glass, ceramic and some plastic cookware are microwave-safe.
Suggestion for Complete Meal: Serve with grapes, slices of nectarine and toast triangles followed by low fat vanilla yogurt.
