Egg Croquettes
Ingredients
- 4 hard boiled eggs, peeled
- 1 can (10 oz/284 mL) salt-reduced condensed cream of mushroom soup, divided
- ½ cup (125 mL) finely chopped mushrooms
- 1 packet (71 g) original recipe coating mix, divided
- 2 tbsp (30 mL) chopped fresh parsley, divided
- ¼ cup (60 mL) milk (1%)
- ½ tsp (2.5 mL) dried thyme (optional)
Instructions
- Step 1
Finely chop eggs; combine with 1/2 cup (125 mL) soup, mushrooms and 3 tbsp (45 mL) coating mix. Scoop for equal portions of mixture onto plate. Shape into patties approximately 3 inches (8 cm) in diameter with spoon or fork. Cover and refrigerate for about 30 minutes. (Patties can be made a day ahead up to this point.)
- Step 2
Combine remaining coating mix and parsley on plate or in shallow dish. Pick up patties, one at a time (they will be sticky so use a fork or thin flipper to help transfer them) and place in coating mix. Cover patties completely with coating mixture, turning over as necessary; shake off any excess. Discard any leftover coating mix.
- Step 3
Spray large non-stick skillet generously with cooking spray. Heat skillet over medium heat. When hot, add patties; cook until golden brown on both sides and heated through, 4 or 5 minutes per side.
- Step 4
Meanwhile, combine remaining soup and parsley, milk, and thyme, if desired, in small saucepan until blended; heat over medium heat stirring frequently. (If desired, add 1 tbsp (15 mL) more milk for thinner sauce.) Serve croquettes with warm sauce.
Tips
- Sauce can also be made in the microwave. Combine remaining soup and parsley, milk and thym in microwave-safe bowl. Cover with plastic wrap with one corner pulled back for venting. Microwave on Medium-High (70% power) until hot, about 2 minutes, stirring after 1 minute.
- Instead of coating mix, use dried Italian bread crumbs or Panko bread crumbs.
