Chiu Chow Egg Omelette with Diced Oyster
Named after a city in Southern China, this is a tasty and stylish dish for the whole family.

Ingredients
- 5 oz (145 g) Oyster meat
- 4 Eggs
- 1 oz (30 g) Chopped green onion
- 2 tsp (10 mL) Cooking oil (canola or vegetable)
- ⅓ tsp (2 mL) Salt
- ⅓ tsp (2 mL) Sugar
- 2 or 3 parsley leaves
Instructions
- Step 1
Bring 3 ½ cups of water to a boil in a small, covered pot. Once boiled, remove from heat.
- Step 2
Soak the oyster meat in hot water for 10 minutes. Remove, then spread it on a cutting board and mince.
- Step 3
In a mixing bowl, add cracked eggs, minced oyster, chopped green onion, salt and sugar, and mix.
- Step 4
Heat wok with cooking oil, pour the egg and oyster mixture in, and sear over low heat for 2 minutes on each side.
- Step 5
Flip onto a plate and garnish with parsley leaves. Serve immediately.
