Egg yolk recipes are huge this year and one of our favourite trends is the cured egg yolk – a unique egg recipe that puts a twist on every egg’s resident flavour bomb:

“Packed in salt and spices to cure for several days, these yolks are a buried treasure of umami taste. The result is firm enough to shave over pasta, salads and more.”

Things You’ll Need

Medium bowl
1 1/2 cups kosher salt
1/4 cup of sugar
6 egg yolks
Small glass baking dish

Step 1

Salt Cured Egg Yolks Step 4

Mix salt and sugar in medium bowl until evenly incorporated. Spread half of the seasoned salt mixture in small glass baking dish. Using your fingers or the back of a spoon, make 6 evenly spaced indentations. Spoon your egg yolks into each indentation. Gently cover yolks with remaining mixture. Gently! Cover with plastic wrap and refrigerate for four days.
