French Toast Fingers

French Toast Fingers transform a breakfast favourite into a fun, dippable treat. A hint of orange zest brightens the egg mixture, while strawberry jam adds a touch of sweetness between slices. Ingredients

  • 4 eggs
  • ½ tsp (2.5 mL) grated orange rind
  • 2 tbsp (30 mL) orange juice
  • ¼ cup (60 mL) low sugar strawberry jam
  • 8 slices whole wheat bread
  • Icing sugar and maple syrup (optional)

Instructions

  • Step 1

    Whisk eggs, orange rind and juice in small bowl; set aside.

  • Step 2

    Match four pairs of bread slices. With two slices stacked on top of each other, trim crusts from each pair (reserve crusts for another use or discard). Spread 1 tbsp (15 mL) jam on one slice of each pair; place second slice on top. Cut each sandwich into three even strips. Dip sandwiches into egg mixture, flipping to coat both sides.

  • Step 3

    Spray large non-stick skillet or griddle or with cooking spray. Heat skillet over medium heat.

  • Step 4

    Cook sandwiches on both sides until golden brown, about 2 minutes. Dust with icing sugar and serve with of maple syrup for dipping, if desired.
