High-Protein Chocolate Mousse

Ingredients
- 6 hard boiled eggs
- ⅓ cup (75 mL) whole milk
- ⅓ cup (75 mL) maple syrup
- ⅓ cup (75 mL) unsweetened cocoa powder
- 1 ½ tsp (7.5 mL) vanilla extract
- Pinch of salt
- Optional toppings: whipped cream or Greek yogurt, fresh fruit, and chocolate shavings or chocolate chips
Instructions
- Step 1
In a high-powered blender, combine the hard boiled eggs, milk, maple syrup, cocoa powder, vanilla and salt. Blend on high until completely smooth, scraping down the sides as needed.
- Step 2
Refrigerate for 1 to 2 hours. When ready to serve, top as desired.
