Pesto Ham Frittata

This frittata elevates breakfast with a hearty blend of ham, pesto, and eggs. Achieving a nice balance of protein and flavour, this dish can be whipped up in just a few minutes, making it an easy choice for brunch or any meal when time is tight.
Ingredients
- 8 eggs
- ½ cup (125 mL) water
- ¼ tsp (1.25 mL) pepper
- 6 slices ultra thin ham
- 2 tbsp (30 mL) pesto
- 1 medium tomato, seeded and chopped
Instructions
- Step 1
Whisk eggs, water and pepper. Set aside. Place ham, overlapping slightly, in 10-inch (25 cm) non-stick skillet.

Spread pesto over ham. Heat skillet over medium heat. Pour egg mixture over ham and pesto in skillet. As eggs set around edge of skillet, with spatula, gently lift cooked portion to allow uncooked egg to flow underneath. Cook until bottom is set and top is almost set.
- Step 3
Sprinkle tomato over frittata; cover skillet for a minute to heat tomato. Loosen frittata around edge of skillet, then slide frittata onto plate. Slice into four wedges and serve.
