Quick Ham and Eggs
Who knew a ham and eggs breakfast could be this quick? With just a few ingredients and only 10 minutes of preparation and cook time, you’ll soon be enjoying a ramekin filled with creamy eggs and ham, topped with fresh salsa.

Ingredients
- 4 eggs
- ⅛ tsp (0.5 mL) pepper
- 2 tbsp (30 mL) softened cream cheese, cut into pieces
- 2 tbsp (30 mL) diced ham
- 2 tbsp (30 mL) salsa
Instructions
- Step 1
Spray two 1-cup (250 mL) microwave-safe ramekins or custard cups with cooking spray.
- Step 2
Whisk eggs and pepper in medium bowl. Whisk in cream cheese, then ham. Divide egg mixture evenly between two ramekins.
- Step 3
Microwave on Medium (50% power) until just cooked, about 4 minutes. Let stand for 1 minute.
- Step 4
Invert each ramekin onto individual plate; lift off ramekins. Top each serving with salsa.
Tips
- Instead of ramekins or custard cups, use mugs.
- Instead of salsa, use a bruschetta topping.
