Matzah Margherita Pizza

Matzah margherita pizza transforms the Passover staple into a quick and easy meal. By topping matzah crackers with pizza sauce, buffalo mozzarella, and eggs, you create individual pizzas with minimal fuss. Baking the eggs directly on top allows you to customize the yolk doneness to your preference. Fresh basil leaves add a pop of flavour to this simple yet satisfying dish.
Ingredients
- 4 matzah crackers
- ½ cup (125 mL) prepared pizza sauce
- 1 buffalo mozzarella ball, sliced
- 4 eggs
- 12 fresh basil leaves
Instructions
- Step 1
Preheat oven to 425°F (220°C). Arrange matzah on large parchment paper-lined baking sheet.
- Step 2
Spread some of the pizza sauce over each matzah cracker, leaving a small border around the edge. Top each with a couple slices of buffalo mozzarella. Crack an egg in the centre of each cracker.
- Step 3
Bake for 10 minutes or until egg white is set and yolk is cooked to desired doneness. Scatter fresh basil leaves over each pizza before serving.
