Baked Scotch Eggs

Baked Scotch eggs offer a twist on the classic British snack by using the oven instead of deep-frying. Hard boiled eggs are wrapped in seasoned turkey or pork sausage, then coated in bread crumbs. Baking creates a crisp exterior while keeping the sausage layer juicy, for a satisfying appetizer or picnic food.
Ingredients
- 1 lb (0.5 kg) turkey or pork sausage, with casing removed
- 8 hard boiled eggs, peeled
- 2 eggs, whisked
- ⅓ cup (75 mL) dry bread crumbs
Instructions
- Step 1
Preheat oven to 375°F (190°C).
- Step 2
Divide sausage meat into eight equal portions. Pat out one portion to 1/8-inch (0.2 cm) thickness. Wrap completely around a hard boiled egg, pressing edges to seal. Repeat with remaining eggs and sausage.
- Step 3
Roll sausage-coated eggs in whisked eggs, then in bread crumbs. Place eggs on baking sheet.
- Step 4
Bake in preheated 375°F (190°C) oven until lightly browned, about 20 to 25 minutes. Serve warm. Or let cool, then refrigerate and serve cold. Serve within three days.
