BLT Egg Wrap

BLT Egg Wrap combines breakfast and lunch favourites in one handheld meal. Scrambled eggs join crisp bacon, fresh lettuce, and juicy tomatoes, all wrapped in a soft tortilla. This quick wrap works equally well for busy mornings or light dinners.
  Ingredients
- 1 slice turkey or chicken bacon
- 1 egg
- ¼ tsp (1.25 mL) onion powder
- ⅛ tsp (0.5 mL) pepper
- 1 medium flour tortilla (about 6 inches/15 cm)
- 2 tsp (10 mL) fat free mayonnaise
- 1 large lettuce leave
- 2 tbsp (30 mL) diced tomato
Instructions
- Step 1Whisk egg, onion powder and pepper in small bowl; set aside. 
- Step 2Cook bacon in small non-stick skillet over medium heat or in microwave until crisp. Remove bacon from skillet. 
- Step 3Pour egg mixture into skillet; cook and stir until scrambled but not dry. 
- Step 4Spread tortilla with mayonnaise. Place lettuce on top; add bacon, scrambled eggs and tomato. Roll up wrap and serve.
