Bombay Egg Breakfast Sandwich

Ingredients
Fried Egg
- 2 tsp (10 mL) butter
- ¼ tsp (1.25 mL) cumin seeds
- ¼ tsp (1.25 mL) curry powder or curry masala
- 1 egg
- 1 tbsp (15 mL) red onion, finely chopped
- 1 green chili, finely chopped (optional)
- salt, to taste
English Muffin
- 1 English muffin
- 1 tsp (5 mL) butter
- 1 cheddar cheese slice
Instructions
- Step 1
Toast English muffin until golden in colour. Spread with butter and top with a cheddar cheese slice. Set aside.
- Step 2
Heat a small skillet on medium heat. Melt butter and add cumin seeds. Stir and fry for one minute until fragrant. Blend in curry powder or curry masala. Break egg into skillet. Sprinkle with red onions and green chilies. Cook until done as desired and add salt, to taste.
- Step 3
Top fried egg on English muffin to serve.
