Buffalo Chicken Cobb Sandwich

With all the spice of buffalo chicken and all the fixings of a Cobb salad, this fusion sandwich is a go to!
Ingredients
- 2 hard boiled eggs, sliced
- ¾ cup (175 mL) shredded cooked chicken
- ¼ cup (60 mL) mild buffalo wing sauce
- ¼ cup (60 mL) mayonnaise
- 2 whole wheat buns, split
- 2 slices Swiss cheese
- ½ cup (125 mL) shredded lettuce
- 2 slices tomato
Instructions
- Step 1
Toss chicken with buffalo sauce. Spread mayo over each bun.
- Step 2
Sandwich cheese, lettuce, buffalo chicken, eggs and tomato slices in buns.
Tips
• Substitute a crumble of blue cheese for Swiss cheese.
• For a vegetarian option, substitute slices of pan-fried tofu for chicken.
