Egg in a Bread Basket
With just a few staple ingredients, enjoy this neat little breakfast or brunch cup that’s ready in less than 10 minutes. Try one of several variations by adding different meats, herbs and cheeses, or keep it simple with just a hint of heat from a spoonful of salsa.

Ingredients
- 1 slice whole wheat bread
- 1 tbsp (15 mL) salsa
- 1 egg
- 2 tsp (10 mL) chopped green onion
- 2 tsp (10 mL) chopped sweet green pepper
- 1 tbsp (15 mL) shredded Monterey Jack or mozzarella cheese
Instructions
- Step 1
Trim crust from bread; discard or save crust for another use.
- Step 2
Spray inside of large custard cup or ramekin (about 1 cup/250 mL size) with cooking spray.
- Step 3
Press bread into custard cup. Spoon salsa onto bread. Crack egg over top. Sprinkle green onion, green pepper and cheese over egg.
- Step 4
Microwave on High (100% power) until yolk is cooked as desired, 1 to 2 minutes.
Tips
Variations:
•Smoked salmon or herb cream cheese, diced green onion and chopped fresh dill
•Chopped ham and shredded Swiss cheese
•Diced tomatoes, chopped fresh basil and diced green onion
