Egg Stuffed Potato Skins

Everyone loves potato skins. Eggs, bacon and cheese served in a potato skin is sure to get their attention. You may need to double this one!

Ingredients

  • 2 warm baked potatoes
  • 4 eggs
  • 3 tbsp (45 mL) light sour cream
  • 3 tbsp (45 mL) chopped chives
  • 8 slices salt-reduced bacon, cooked and chopped
  • ½ cup (125 mL) shredded Monterey Jack cheese

Instructions

  • Step 1

    Preheat oven to 375°F (190°C).

  • Step 2

    Slice potatoes in half lengthwise; scoop out inside flesh of potatoes with spoon, being careful not to pierce skins.

  • Step 3

    Combine potato flesh, eggs, sour cream, chives and bacon in medium bowl. Stuff potato skins with egg mixture. Sprinkle cheese over top.

  • Step 4

    Bake in preheated 375°F (190°C) oven until cheese melts, about 15 minutes.
