Egg Stuffed Potato Skins

Everyone loves potato skins! Baked potato halves are filled with a savoury mixture of eggs, bacon, and chives, then topped with melted Monterey Jack cheese. The combination of crispy potato jackets with the cheese and egg filling is sure to get their attention. You may need to double this one!
Ingredients
- 2 warm baked potatoes
- 4 eggs
- 3 tbsp (45 mL) light sour cream
- 3 tbsp (45 mL) chopped chives
- 8 slices salt-reduced bacon, cooked and chopped
- ½ cup (125 mL) shredded Monterey Jack cheese
Instructions
- Step 1
Preheat oven to 375°F (190°C).
- Step 2
Slice potatoes in half lengthwise; scoop out inside flesh of potatoes with spoon, being careful not to pierce skins.
- Step 3
Combine potato flesh, eggs, sour cream, chives and bacon in medium bowl. Stuff potato skins with egg mixture. Sprinkle cheese over top.
- Step 4
Bake in preheated 375°F (190°C) oven until cheese melts, about 15 minutes.
