Fried Egg Breakfast Bagels

Start your day with a classic combination - a crispy bagel topped with a sunny-side-up egg. This breakfast option comes together in no time and offers a satisfying blend of textures and flavours that will keep you fueled for whatever the day brings.

Ingredients

  • 2 bagels
  • ¼ cup (60 mL) spreadable goat cheese
  • ½ cup (125 mL) baby spinach
  • 4 tomato slices
  • 2 eggs
  • Pinch salt, fresh cracked pepper

Instructions

  • Step 1

    Toast split bagel halves.

  • Step 2

    Spread goat cheese over the bottom halves of each bagel.

  • Step 3

    Top each with spinach and tomatoes

  • Step 4

    Cook eggs in a non-stick skillet until desired doneness and arrange over tomatoes. Sprinkle with salt and pepper and top with remaining bagel halves to make sandwiches.
