Lobster Devilled Eggs

You know you’re at a great party when these devilled eggs come out. The addition of lobster is a fresh and special way to dress up a classic appetizer. Try serving these with a round of Caesars and invite me over!
Ingredients
- 6 Hard boiled eggs, peeled and halved lengthwise
- ½ cup (125 mL) Cooked lobster, chopped into small pieces (reserve 12 small pieces for garnish)
- ¼ cup (60 mL) Mayonnaise
- 1 tsp (5 mL) Dijon mustard
- 2 tbsp (30 mL) Chives, finely chopped
- ½ tsp (2.5 mL) Lemon juice
- Hot sauce
- Salt and pepper
Instructions
- Step 1
In a small bowl, combine egg yolks, lobster meat, mayonnaise, mustard, chives, and lemon juice; stir until smooth. Season to taste with hot sauce, salt and pepper.
- Step 2
Fill egg whites with yolk mixture, arrange on a platter and garnish with reserved lobster pieces. Serve immediately.
