Microwaved Egg-Stuffed Peppers

Microwaved egg-stuffed peppers are a quick and easy variation on traditional stuffed peppers. Sweet red peppers serve as edible vessels for eggs, creating individual portions that can be prepped and ready in just under 15 minutes. The microwave cooks the peppers until tender while gently setting the eggs inside.
Ingredients
- 2 red sweet peppers
- 4 eggs
- ⅛ tsp (0.5 mL) pepper
- Pinch salt
Instructions
- Step 1
Slice tops off peppers. Remove seeds inside the peppers.
- Step 2
Place peppers upright on microwave-safe plate. Microwave on High (100% power) for 3 minutes. Invert and drain on paper towel.
- Step 3
Place peppers upright on microwave-safe plate. Break 2 eggs in each pepper. Pierce egg yolks several times with fork. Season with pepper and salt.
- Step 4
Microwave on Medium-High (70% power) until eggs are almost cooked, about 5 minutes. Let stand for 2 minutes, then serve.
