Microwaved Egg-Stuffed Peppers

This is such a simple and attractive starter. Sweet red peppers work really well as microwaveable containers for your egg mixture. Since this dish is ready to serve in under 15 minutes, you can spend more time at the table, and less time in the kitchen!
Ingredients
- 2 red sweet peppers
- 4 eggs
- ⅛ tsp (0.5 mL) pepper
- Pinch salt
Instructions
- Step 1
Slice tops off peppers. Remove seeds inside the peppers.
- Step 2
Place peppers upright on microwave-safe plate. Microwave on High (100% power) for 3 minutes. Invert and drain on paper towel.
- Step 3
Place peppers upright on microwave-safe plate. Break 2 eggs in each pepper. Pierce egg yolks several times with fork. Season with pepper and salt.
- Step 4
Microwave on Medium-High (70% power) until eggs are almost cooked, about 5 minutes. Let stand for 2 minutes, then serve.
