Open-Faced Egg Sandwich with Hummus and Avocado

This open-faced sandwich combines creamy hummus, ripe avocado, and sliced hard boiled eggs for a protein-packed meal. The whole grain toast provides a hearty base, while chili powder adds a subtle kick. You can boil the eggs and toast the bread ahead of time for quick assembly. Serve immediately after topping to keep the avocado fresh.
Ingredients
- ½ cup (125 mL) hummus
- 4 whole grain bread slices, toasted
- 1 ripe avocado, pitted, peeled and sliced
- ¼ tsp (1.25 mL) chili powder
- ¼ tsp (1.25 mL) salt
- ¼ tsp (1.25 mL) pepper
- 4 hard boiled eggs, peeled and sliced
Instructions

Spread hummus evenly onto each slice of bread; top with avocado slices. Season with chili powder, salt and pepper. Top with egg slices.
