Quick Morning Pizza

This breakfast pizza puts a morning spin on a favourite dish. Eggs form the base, creating a fluffy omelette "crust" that's topped with pepperoni and melted cheese. A side of warm pizza sauce completes the transformation, turning a classic omelette into a playful, pizza-inspired meal.
  Ingredients
- 2 eggs
- ½ tsp (2.5 mL) dried oregano or basil (optional)
- 8 thin slices pepperoni
- 2 tbsp (30 mL) shredded part skim mozzarella cheese
- 3 tbsp (45 mL) pizza or pasta sauce warmed, if desired
Instructions
- Step 1Whisk eggs and oregano, if using, in small bowl. 
- Step 2Spray 8-inch (20 cm) non-stick skillet with cooking spray. Heat skillet over medium heat. 
- Step 3Pour egg mixture into skillet. With spatula, gently push cooked portions toward centre. Tilt and rotate skillet to allow uncooked egg to flow into empty spaces. 
- Step 4Top with pepperoni and cheese. Cover and cook until eggs are set and cheese is melted, about 2 minutes. 
- Step 5Slide pizza onto plate. Serve with sauce for dipping.

Tips
      - Instead of oregano or basil, use Italian seasoning.
- Instead of pepperoni and mozzarella cheese, use ham or cooked vegetables, and another type of cheese.
