Perfect Scrambled Eggs with Ham and Cheese

There’s something inviting about warm scrambled eggs, particularly when you fold in chunks of ham and gooey cheese. This dish makes an excellent brunch option that feels both indulgent and approachable. Serve it up alongside your favourite toast for a classic combination that never disappoints.

Ingredients

  • 8 eggs
  • ½ cup (125 mL) milk (1%)
  • ⅛ tsp (0.5 mL) salt
  • 1 cup (250 mL) shredded light Cheddar, Swiss or Monterey Jack cheese
  • ½ cup (125 mL) chopped ham
  • 1 green onion, chopped

Instructions

  • Step 1

    Whisk eggs, milk, salt and pepper. Stir in cheese and ham.

  • Step 2

    Spray large non-stick skillet with cooking spray. Heat skillet over medium-high heat.

  • Step 3

    Pour in egg mixture and immediately reduce heat to medium. As mixture begins to set, gently move spatula across bottom and side of skillet to form large, soft curds. Cook until eggs are thickened and no visible liquid egg remains.

  • Step 4

    Sprinkle green onion over top.
