Smoked Sausage Corn Frittata

Ingredients

  • 8 eggs
  • ¼ tsp (1.25 mL) pepper
  • ½ cup (125 mL) no salt or salt reduced cream style corn
  • 1 cup (250 mL) cooked or frozen mixed vegetables (e.g. peas, carrots, sweet peppers)
  • ½ cup (125 mL) diced smoked sausage (e.g. Polish, Kielbasa)
  • ½ cup (125 mL) shredded light Cheddar cheese

Instructions

  • Step 1

    Preheat broiler.

  • Step 2

    Whisk eggs and pepper in medium bowl. Stir in corn, vegetables and sausage.

    Spray 10-inch (25 cm) ovenproof non-stick skillet with cooking spray. Heat skillet over medium heat. Pour in egg mixture. As mixture sets around edge of skillet, with spatula, gently lift cooked portions to allow uncooked egg to flow underneath. Cook until bottom is set and top is almost set.

  • Step 4

    Sprinkle cheese over top. Place skillet under preheated broiler for 2 to 3 minutes to melt cheese, or cover with lid until and cook for a couple minutes on stovetop. Loosen frittata around edge of skillet, then cut into wedges.
