Meringue ghosts are a fantastic way to get the kids involved in the kitchen. As they pipe out these airy shapes, they can unleash their creativity and embrace the Halloween spirit. With their light texture and sweet flavour, these spirits add a spooky yet charming element to any gathering.

Ingredients

  • 4 large egg whites (1/2 cup/125 mL)
  • ¼ tsp (1.25 mL) cream of tartar
  • ¼ tsp (1.25 mL) salt
  • ⅔ cup (170 mL) granulated sugar
  • Gel icing or melted chocolate

Instructions

  • Step 1

Preheat oven to 300°F (160°C). Position the oven racks to the top and bottom third. Line two large baking sheets with parchment paper; set aside.

  • Step 2

Place egg whites, cream of tartar and salt in a large glass or metal bowl. Beat, with an electric mixer on high, until egg whites hold a soft peak. Gradually add sugar, while still beating, until egg whites hold a stiff, shiny peak.

  • Step 3

Transfer the stiff egg whites to re-sealable plastic bag and snip off one corner. Pipe ghosts and other spooky characters on the prepared baking sheets.

  • Step 4

Bake, rotating the pans halfway through, for 60 minutes or until ghosts are only slightly tacky. Turn off oven and leave the trays inside to cool for 1 hour. Transfer to a wire rack to cool completely. Carefully remove from parchment. Decorate with gel icing or melted chocolate.
