Tuscan Poached Egg

A poached egg is the star of this Italian-inspired dish served on toasted bread. Nestled on focaccia and garnished with bruschetta and Parmesan cheese, these comforting ingredients come together in a flash for a simple, delicious dish.
Ingredients
- 1 egg
- 1 slice focaccia bread
- 1 slice prosciutto or ham
- 2 tbsp (30 mL) prepared bruschetta mixture, drained
- 2 tsp (10 mL) grated Parmesan cheese
Instructions
- Step 1
Fill saucepan with about 3 inches (8 cm) of water. Heat until water simmers gently. Break cold egg into small dish or saucer. Holding dish just above simmering water, gently slip egg into water. Cook in barely simmering water until white is set and yolk is cooked as desired, 3 to 5 minutes. Remove egg with slotted spoon and drain well on paper towel.
- Step 2
Toast bread; place on serving plate.
- Step 3
Place prosciutto on bread. Place poached egg on prosciutto. Top with bruschetta mixture and cheese.
Tips
Parmesan cheese can be shaved instead of grated.
