Western Omelette Bites

These bite-sized Western omelettes pack all the flavours of the classic breakfast into a convenient, handheld form. Scrambled eggs mix with colourful bell peppers, onions, and mushrooms for a savoury filling. A quick melt of cheddar cheese and dollop of salsa finish them off. Assemble just before serving to keep the tortilla chips crisp.

Ingredients

  • 3 eggs
  • ½ bell pepper, diced
  • ½ onion, diced
  • 5 chopped mushrooms
  • 1 cup (250 mL) grated Cheddar cheese
  • 1 jar salsa
  • 1 bag tortilla chips

Instructions

  • Step 1

    Scramble eggs with all vegetables.

  • Step 2

    Place a spoonful of egg mixture into the tortillas and top with salsa and grated cheese.

  • Step 3

    Place in oven for few minutes until cheese has melted. Serve immediately.
