Western Pitas

For a casual weekday dinner that’s full of flavour, try filling pitas with ham, eggs, and cheese. This dish brings together hearty ingredients and pepper sauce for a comforting bite. It’s a great option for brunch or a quick lunch when you need something tasty without the fuss.
Ingredients
- ⅓ cup (75 mL) finely chopped onion
- ⅓ cup (75 mL) finely chopped sweet green pepper
- ⅓ cup (75 mL) finely chopped ham
- 6 eggs
- ½ tsp (2.5 mL) hot pepper sauce
- 2 pita breads, cut in half
- 4 tsp (20 mL) prepared mustard
- 4 lettuce leaves
- ½ cup (125 mL) shredded Monterey Jack or Cheddar cheese
Instructions
- Step 1
Spray large non-stick skillet with cooking spray. Heat skillet medium over medium heat. Add onion and green pepper; cook, stirring frequently, until softened, about 5 minutes. Add ham.
- Step 2
Whisk eggs and hot pepper sauce in small bowl. Pour into skillet. As mixture begins to set, gently move spatula across bottom and side of skillet to form large, soft curds. Cook until eggs are thickened and no visible liquid egg remains.
- Step 3
Spread 1 tsp (5 mL) mustard inside each pita half. Line pitas with lettuce. Divide scrambled eggs and cheese between pitas.
