Sneak Your Veggies In Veggie Nuggets

For dinner tonight try this incredibly easy casserole that’s easily adapted to ingredients you have on hand. It’s quick to prepare and uses simple ingredients like marinara sauce, peppers, and sweet potatoes that are slow roasted to bring out tons of flavour. Packed with wholesome flavours and protein, it's an ideal choice for busy weeknights or family bunch.
Ingredients
- 3 carrots, peeled and cut into chunks
- ½ head cauliflower, broken up
- 1 head broccoli, broken up
- 2 cloves garlic, chopped
- 2 eggs
- ½ teaspoon onion powder
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 ¾ cups (440 mL) bread crumbs
- oil, for pan-frying (if using)
- honey for dipping
Instructions
- Step 1
In a food processor, combine all of the veggies, garlic and eggs. Blend until everything is a uniform size.
- Step 2
Add in the bread crumbs and pulse to combine.
- Step 3
Once combined, remove into a small bowl and form small nugget sized shapes.
- Step 4
If frying: Heat oil in a pan to 350°F (180°C). Add nuggets and fry until crispy, approximately 5 – 10 minutes, depending on the desired crispiness.

If baking: Place nuggets on parchment paper and bake at 350°F (180°C) flipping halfway through cooking, about 15 minutes.
- Step 6
Serve with honey or dips of choice.
